Cantovera

The DO Ribera del Duero is located within a strip of the Duero River basin, about 115 kilometers (about 71.46 mi) long and 35 kilometers (about 21.75 mi) wide, located at the confluence of the provinces of Burgos, Segovia, Soria and Valladolid. It includes a registered vineyard area of ​​22,319 Has. and has registered 8,255 viticulturists and 311 wineries.

The DO is characterized by an extreme climatology, with a moderate-low rainfall (400-600 mm as an average of rainfall per year) that, together with its dry summers and long and rigorous winters, with marked thermal oscillations throughout the seasons, frame it within a Mediterranean climate whose primary character is continentality.

The vineyards are located between 700 and 1,000 meters above sea level. Most of the vineyards in the lower areas are made up of sand, marl and limestone sediments, while the higher vineyards have a higher content of silty or clayey sand.

Cantovera Vineyard

It is the merging of the word canto-rodado (rolling stone), which are the most common stones found in these vineyards and vera (riverside), because the plots are on the banks of the Botijas stream, a tributary of the Duero River.

Soils
Formed during the Miocene, it presents horizontal levels, gently undulating, limited by differential erosion, and converted today to the state of peneplain. It is located in the great northern plateau of the Iberian Peninsula, formed by a large old plinth razed and, in part, covered by tertiary sediments.

Vineyards are located in Olmos de Duero at an altitude of 745 meters (about 2444.23 ft) above sea level. A plot of 1.60ha and another of 3.6ha with average yields of 7.500kg/ha.

TROPICAL EXPLOSION AND FRESHNESS

Cantovera

Variety: 100% Tinta del País (Tempranillo), that in these latitudes has a small grain with thick skin that gives an intense color and that concentration of fruit characteristic of Ribera wines.

Elaboration: manual harvesting, maceration for about 20 days, alcoholic fermentation at a stable temperature of 28ºC in truncated vats and malolactic fermentation in stainless steel tanks.

Ageing: 9 months in French (50%) and American (50%) oak barrels. After aging, the wine rests for 6 months in a French oak vat with weekly racking.

TASTING NOTES

Intense cherry with bright violet hues. Balanced and structured mouthfeel. Silky finish with aromas of cocoa and spices.
